Just made our first Caesar (-ish) Salad and I did a take on the Caesar Dressing with dried tomatoes instead of anchovies in the dressing:
1/2 clove of garlic
1 1/2 teaspoon of fresh squeezed lemon juice
1 dl finely grated Grana Padano
3 pieces dried tomato
pinch of salt
1 egg yolk
1/2-3/4 dl rapeseed oil
Mixed everything finely with a hand mixer, then slowly added oil while mixing ferociously. Turned out fantastic!
